In the back of the shop, employees busily sift the grated cassava and prepare it for baking. Next to them, an electric motor powers a device that turns grated cassava as it bakes into farine — a cereal made from cassava tubers — in a wood-fired cauldron.
ST. LUCIA (February 25, 2015) - Prominent Caribbean hotelier Karolin Troubetzkoy has been appointed Chairman of the Caribbean Alliance for Sustainable Tourism (CAST).
The appointment is the latest Caribbean tourism sector leadership role for the St. Lucia hotelier who serves as Executive Director of the storied Jade Mountain and Anse Chastanet resorts in Soufrière, St. Lucia.

Media personnel and spokespersons in Dominica who attended a three day CSME Media Workshop at the Windsor Park Stadium’s conference room has hailed the workshop as beneficial and informative.
The reporters and spokespersons, who participated in the workshop held between 23 & 25 February 2015, say they are better informed on the five regimes which give meaning to CARICOM and the CARICOM Single Market (CSM).
“As a media manager, I take away so much information from this workshop,” Tarnia Green, media manager at Digicel Play told Dominica Vibes.
“While I fully understand the political constraints faced by our Heads of Governments in the court of public opinion, as UN Secretary-General Special Envoy, I must continue to make the case that principles of human rights demand that the barriers to HIV related stigma and discrimination be removed. I urge Ministers of Government and other leaders to join as champions for changing attitudes and breaking down those barriers for social justice.
CASTRIES, St Lucia (CMC) – Caribbean countries were on Wednesday expressing concerns over a new strain of HIV virus that has been identified by Cuban scientists.
The Ministry of Health here said that research indicates that this strain CRF19CPX develops much faster into full blown AIDS than previous strains of the virus, a statement from the Ministry said Wednesday.
